Shame on you. At least we have salad. A smoked salmon with an easy homemade lemon poppy seed dressing. It’s a head start to a fit bod, beach hair, and coconut oil.

I have a thing for romaine lettuce. It’s simple. Always fresh and crunchy. This salad is perfect for a filling, but light lunch or you could even make this a big salad for dinner.
Smoked Salmon Salad with Avocado and Lemon Poppy Dressing
4 cups romaine lettuce, chopped
1 small granny smith apple, cored and thinly sliced
1/2 cup shelled edamame
1/4 cup pistachios
2 tablespoons capers, drained
4 ounces smoked salmon, cut into 1-inch pieces
1 avocado, pitted and diced
2 tablespoons fresh lemon juice
1 tablespoon finely diced shallot
1 teaspoon poppy seeds
1/2 teaspoon dijon mustard
1/2 teaspoon honey
2 tablespoons extra-virgin olive oil
kosher salt and freshly ground black pepper
In a small bowl, whisk together the lemon juice, shallot, poppy seeds, dijon mustard, honey, and olive oil. Season with salt and pepper. Set aside.
In a large bowl, add the romaine, apple, edamame, pistachios, capers, salmon, and avocado. Drizzle desired amount of dressing over the salad and gently toss to coat. Serve immediately.
