Well, hello spring! Hello sunshine. We welcome you with open arms. As I look at my phone’s weather app with a nice 36 degrees blaring on the screen. You had me fooled first day of spring. Shame on you. At least we have salad. A smoked salmon with an easy homemade lemon poppy seed dressing. It’s a head start to a fit bod, beach hair, and coconut oil.

Does apple seem odd to you with salmon and avocado? You might be pleasantly surprised by the tartness from the granny smith that mixes so well with the capers and lemons. You don’t want to miss out on this flavor combo.

I have a thing for romaine lettuce. It’s simple. Always fresh and crunchy. This salad is perfect for a filling, but light lunch or you could even make this a big salad for dinner.
